Some traditional banks offer contactless stickers, ketrings, bands, etc. Not ideal (limited quota), but google-free.

The Indian UPI System is a pretty great for this. I wish more countries adopted it/built something similar instead of relying on corporations.
My bank have their own payment app. Maybe look into that for your own. It doesn't work with smartwatches and it of course still runs on your Android phone, but if that's enough de-googlefication for you you could give it a try.
As much as I understand people desire to move away from big tech, I'm not sure if I'd trust many smaller companies or open source solutions with my payment details in this way, at least Google have arrangements with the banks to protect against any issues.
Maybe your best bet would be to just get a case your debit card can fit in and carry that for contactless payments?
Depending on where you live there might be a non google/apple way of contactlens payment. Here in Belgium the most common used payment app is called payconiq, and does not seem to be related to google.
Depends on your bank. Better call them first.
For example in Russia there are plenty if alternatives like MirPay. Many banks also provide own "Pay" thing that works via NFC or by scanning QR code on terminal.
Unfortunately, this is not possible.
