Vegan Cowboy Cookies

It’s been ages since I’ve made them, but these are delicious, especially when made with coconut oil.

Caveat, I am not vegan, but I love these recipes.

I'm not vegan either. I can't do dairy after years of pain killers, and discovered sticking to vegan is the safest bet. I'm really looking for a budget alternative to the local grocery store's vega-cocain-cookies. Thanks for sharing!

Oh my goodness these look great. Does it require real olive oil or does the fake grocery store stuff work?

I've done them both ways. They're still sweet and munchable with cheap grocery OO, but if you like the taste of a high end oil it will come through and make them even better (in my non-humble opinion).

Just use a regular recipe and use flax meal to replace eggs, and crisco instead of butter
