I agree with Dee, we'll need some general location info, and also how much sun your balcony gets. Do you face north/east or south/west?

Some herbs might be an easy choice. Taking cuttings can keep them a manageable size, and it's great to just be able to grab what you need while cooking.

Herbs and leafy greens right now (especially with facing east; should be easier on a newer grower.)

Go with tried and true: Basils, Rosemary, Thymes, Sage, Oregano. Romaine Lettuce, Rocket, Swiss chard, Kale

Herbs will be useable from purchase (should still be a nursery somewhere with some 4” pots that are hanging on or could try from seed.)

The leafy greens shouldn’t take too long to get started. They are a late summer start to sow the seeds but now is fine.

That'll vary wildly based on where you are in the world. We'd need at least a general region to even begin to try and give any opinions. Like, the Pacific Northwest, New England, Northern Italy, South of France. Idk European regions but you get my meaning.

Additional info, my balcony faces east, and I live in Poland

Poland has a variety of hardiness zones, which will determine how much longer you have in your growing season. I would suggest things like brassicas (which include kale and broccoli), as they can handle temperatures a bit below freezing. But keep in mind the size of your balcony, as they can get pretty big.

If you can buy seedlings of annual herbs like parsley, dill, basil, there's still time for a good harvest even in the colder areas of Poland. Do you have space where you can bring some pots inside?

I do live in the north-east, the cold region of poland. And I could bring some of them in
