She wears nice clothes to work so I wanted to buy her a dress watch. The main thing I’m unsure about is whether to get her an automatic or quartz watch. I don’t know for certain how much she’ll actually wear it (I hope she wears it a lot) and my concern is if she doesn’t wear it a lot she won’t want the hassle of resetting the time.

Anyone have any experience with buying their significant other who isn’t into watches a watch?

Also any suggestions on dress watches that are $250 or less? Currently looking at some Seikos and Tissots.

Quartz, definitely. Most people who aren't really into watches will not want to deal with setting the time. There are a ton of really nice quartz options available. Check out Tissot and Citizen to start.
