Risc-V (I know it's not software project, but i have big hopes for it)
OpenStreetMap
Wayland
Matrix
Fediverse
i2p for censorship-resistant and privacy-respecting network
KDE so we can have plasma on our risc-v FOSS phones
Coreboot
NixOS it's also on mobile

KDE with custom shortcuts and window rules. It can even have dynamic tiling
