All the NICs are 1GB and my 24 port managed TP-Link switch is 1GB, yet when I transfer data across my LAN I only get 100MB. My cables are all CAT 6 & 7. Any ideas?

Bits are small b. Divide by 8 to get your speed in bytes - gigabit is approximately 125 megabytes per second. Unless you are saying you're only getting 100 megabits (12.5 megabytes per second) then I have no idea.
