Skyrim Anniversary Edition. It's starting to show its age.
Ace Combat starting with 3, which was never completely released in the west. The Japanese Version of Ace Combat 3 had a massive story with Anime-Style video sequences and branching mission design. The western Version had lost almost all Story Elements and has only about half the missions. I would kill for a new Version of that game. Same with the PS2 game, Ace Combat 4,5 and Zero. While great having those games remastered would be monumental
Said it once and I’ll say it a thousand times more.
Legend of Dragoon.
Tony Hawk Pro Skater 3+4. THPS4 was the first one I played, and the THPS 1+2 remaster was really well made so would like to see 3+4 done next.

I really enjoyed Sim Earth as a kid. Just give me an entire planet operating on a geological scale as a sort of "virtual terrarium", and I'll be happy.
Dungeon Keeper. I would also like to say 'Conflict: Freespace' but it's hard to improve perfection. An Update to make the Freespace games run better on newer computers should be sufficient.

Saints row 2, the pc port is kinda fucked. Can’t believe they remastered saints row the third instead.

I don't know if remaster is the right term so much as revival - I find we're kind of lacking in true 3D first-person dungeon crawlers, in the vein of Ultima Underworld, Might and Magic 6-8, and Arx Fatalis. I'd love to see more games of that style.
It'll never happen, but there isn't much I wouldn't do for a remaster/remake of Jade Empire.

Icewind Dale 2 need a remaster / EE edition. I remember reading somewhere that the source code was lost. Same issue with HOMM3 extensions that why there is no HD edition of the full game and why GOG version is still the best.
FEAR 1&2. Trepang^2^ is giving me that itch again, would be cool to revisit the OGs again.
