What alternatives are there for Google Wallet/Google Pay? If they are OpenSource better.

Monero.

Otherwise I don't know if you'll find an open source alternative to Google wallet, since the banking system overall is very much the opposite of open source

I have Monero, but i cant use a crypto to pay with my cards with NFC haha

They have to be certified by Mastercard/Visa, so no chance for open source. A few banks have their own implementation. Apart from mentioned samsung has its own version.

Garmin Pay

Requires a Garmin watch instead of a phone. Not open source.

I can use alipay too with my xiaomi band, but its the same, so i prefer google pay haha

Bank card. Never used or want to use anything that collects my payment information.

Data risk to benefit is minimal with these type of apps.

I only use Google pay with a rechargeable card, so its not a big problem
