I recall reading a while back that they're planning a massive overhaul with web manifest v3 and that would enable wider add-on support.

Firefox for iOS is locked into iOS bullshit. It’s basically just a skin for safari.

You need to create a collection and then you can use almost any extension (it's a pain in the ass to setup)

Mozilla is so stupid sometimes... It makes it feel like they are trying to discontinue all extensions.

I think quality assurance is harder, what with mobile operating systems arbitrarily terminating processes. But Manifest V3 should help here, I believe.

If you use Nightly or Beta you can use pretty much any addon with a few steps: https://www.ghacks.net/2022/10/20/firefox-beta-for-android-now-supports-custom-add-on-collections/

They don't even work properly... Can't log into Bitwarden because the captcha doesn't show up

Interesting, I self-host a vaultwarden instance and the firefox add-on for bitwarden is able to talk to it just fine. I wonder if you did the captcha via the browser if the add-on would still attempt to prompt you for it
