According to the article, olive oil is a fruit oil, because it’s made by pressing the whole fruit instead of just the seed.

Also, unlike seed oils, it doesn’t require additional chemical processing in order to make it edible.

Off-topic: I wonder what's done with the rest of the olive skins after pressing... That must be a lot of material...
