Is anyone here signed up on multiple instances? Is there a reason why you'd want to do this?

Not yet, but I will eventually. I usually segregate accounts on platforms: one account that posts things that irl friends/family/coworkers may recognize me by (not yet made) and another account for everything else (this one). It seems natural to have those two accounts be on separate instances given how federation/defederation works.
