I’d recommend Rite-in-the-Rain. I spent about 10 years in the Army, and those were the only products I’d trust to survive. The notebooks and especially the paper are designed to work in the rain, the mud, the dirt, etc. I don’t think any of them have ever broken or worn down on me in that time. I still have all of them to this day. I think I’ve had some of the notebook “cases” for around 12-13 years and they’re still in good shape.

I’d second this! If you’re looking for something that can withstand falling out of a kayak or getting caught in bad weather while hiking, Rite-in-the-rain is definitely top tier.
I've been quite a big fan of stone paper notebooks. I've used Karst in the past and quite liked it. It's definitely.. different to paper. It's not as prone to tear, is usually thicker and smoother to write on, waterproof as well - though the biggest downside is it takes a bit longer for inks to dry.
I haven't really used any other brands to compare with, but I've been very happy with my Leuchtturm1917 notebooks. Come in many different sizes, I like to keep my pocket one in my bag at all times.
I especially like their dotted style paper, perfect for sketching out system diagrams, plotting graphs, and working through geometric problems like vector math. All my main uses for it as an engineer.
