I made this for a BBQ competition in 2019 and won first place in the side dish category against 60 teams. I'm still very proud

I lost the video that used to be up. it was me going through and making the whole thing outside at the grill (even boiling noodles on the side burner). my BBQ team broke up and we shut down our YT channel. I kept the website though with a couple recipes

they really are! The trick is you need to practice lining the pan with the prosciutto and then cook it about half way before you put the mac n cheese into it. Getting that to "look" good is the hardest part. The good news is that even ugly mac n cheese still tastes great

Would there be a difference swapping out the mild cheddar cheese for extra sharp cheddar?

i think you'll notice it. you might like it. i choose a milder kinda just because. but it does work nice with the strong prosciutto flavor
